Our delicious strawberries and raspberries come directly from my red fruit supplier, Maison Frédéric, located near Falaise in Calvados. Every week, I go to the Honfleur market to select the best products for our dishes and desserts.

I source a large portion of my fish twice a week: sole, turbot, brill, sea bass, mackerel, cuttlefish, ray, dogfish, and scallops in season. This supply method guarantees exceptional quality, but it requires me to travel. However, I am committed to this for the sake of the restaurant's quality.
